Starting with assembly in mid-2015, Dr. Udo Kattein and Sebastian
Wolfrum present their experiences with a mobile malting system. The
malting plant is made up of two shipping containers: one for an air
handling unit and one as the process unit with a 10 ton batch size. The
process unit was built as a Saladin steeping, germination, and kiln box
initially; the two presenters were added during the build-out phase with
two 5 ton complimenting cylindroconical steep vessels. Part one of this
presentation will review in detail the acquisition, transport, setup
and necessary engineering; in part two Wolfrum will highlight the
technology of steeping, germination, and kilning as well as initial
malting results.
Sebastian Wolfrum is the founder and maltster of Epiphany Craft
Malt in Durham, NC, providing an integrated regional supply to brewers,
distillers, and other sprouted grain ventures. Born and raised in
Germany, he earned his certification as a brewer and maltster with the
Ayinger Brewery outside of Munich (1997-1999). Continuing his brewing
career in the United States (2006-2013), Sebastian was director of
brewing operations for the second largest craft brewery in North
Carolina. As a founding member of the NC Craft Brewers Guild in 2008, he
continues to be very involved in the affairs of the small brewers in
the region. In 2012, he added a certificate in distilling from IBD,
London. Sebastian also has joined the Capitol Broadcasting Company as
the executive brewmaster for the Rocky Mount Brewmill & Bull Durham
Beer Co. in Durham, NC.
