Webinar Summary"Managing Brewery Production and Operations through COVID-19" was moderated by Scott Britton and Dana Sedin. This panel discussion hosted several industry leaders to answer questions, and provide recommendations, on how to continue with basic operations while surviving this crisis. Topics including implementing social distancing, practical strategies to reduce the risk of COVID-19 exposure, best practices for maintaining beer quality and inventory levels (i.e., excessive inventory/out-of-codes), and considerations when contemplating minimal production, a shutdown of operations, or start-up after closure will surely be open for discussion.
About the Panelists
Steve Breezley SKA | Steve Breezley started his career brewing in the mid-1990s in Oregon and then graduated from the Master Brewer Program at UC Davis, passing the Institute of Brewing and Distilling (IBD), London, Diploma in Brewing Examination (IBD DBE). He has worked at several breweries, from his early days at Saxer Brewing in Lake Oswego, OR, then for several years at Snake River Brewing in Jackson, WY, and later spending 15 years at Avery Brewing in Boulder, CO as their COO. He has also recently served on the board of Directors for Melvin Brewing in Alpine Wy for two years. He is a long-time GABF judge, an active (presenting) member of the Brewer’s Association, MBAA, and also sits on the Metropolitan State University Beer Advisory Board. Steve now serves as the COO at Ska and is heavily involved in the everyday operation of Production. He currently manages their entire Executive Team as well as Production Management, and oversees the finances and budgeting for Ska Brewing Company, Ska Distributing, and Ska Street Ventures, and has an extremely well-rounded understanding of the business as a whole. |
Jeff Cornell AC Golden Brewing Co. | Jeff Cornell has over 19 years with Molson Coors and is currently the General Manager of AC Golden Brewing Company, a craft brewing operation and brand incubator in Golden, Colorado. Prior to his current role, he was Director of Craft Supply Chain supporting and enabling Tenth & Blake’s craft breweries. In addition, he has held a variety of roles including Manager of Brewing Innovation and Development, Head Brewer for AC Golden Brewing Company, and Manager of Corporate Chemistry, Sensory and Microbiology. Prior to joining the brewing industry, he was the Product Specialist for chromatography detectors for Sievers Instruments supporting a variety of industries including petroleum, petrochemical, foods and beverages. The balance of Jeff’s career was in the environmental business holding several roles culminating with Organic Chemistry Operations Manager at the nation’s largest commercial environmental laboratory at the time. Jeff holds a B.S. in Chemistry from Colorado State University and an MSc. with Distinction in Brewing and Distilling from Heriot-Watt University, Edinburgh, Scotland. He has been an active member of the ASBC since 2000, a member of the Board of Directors from 2010-15 and served as President in 2013-14. |

John Mallett Bell's Brewery | John Mallett has directed a production at Bell’s Brewery in Kalamazoo MI since 2001. John serves on many brewing Technical Committees and Boards including the Brewer’s Association, Master Brewers Association of the Americas, the American Malting Barley Association and the Hop Quality Group. He has lectured and written extensively on beer and brewing over his 30+ years in the industry. In 2002, John was the recipient of the Institute for Brewing Studies Russell Schehrer Award for brewing innovation. He is the author of Malt; A Practical Guide from Field to Brewhouse. |
Jason Perkins Allagash Brewing Company | Jason Perkins is the Brewmaster and VP of Brewing Operations for Allagash Brewing Company in Portland, Maine. He has worked in Craft Brewing for over 22 years. He is currently a Brewers Association Board member and serves as the co-chair for the BA Technical Committee. |
About the Moderators
Scott Britton Duvel Moortgat | Scott Britton is presently the senior scientist and research manager for Duvel Moortgat. He earned a Bachelor of Science in Biology from Utica College of Syracuse University (Utica, NY), a Masters of Science in Biotechnology from Johns Hopkins University (Baltimore, MD), and a Masters in Business Administration from Marist College (Poughkeepsie, NY). Presently, he is also currently working towards the completion of his Ph.D. within the Institute of Biological Chemistry, Biophysics, and Bioengineering at Heriot-Watt University (Edinburgh, Scotland, UK). His primary research interests include microbial ecology, quorum sensing, and the chronological lifespan of Saccharomyces cerevisiae. Scott is also the current President of the American Society of Brewing Chemists and an Editorial Board member of the Journal of the American Society of Brewing Chemists. |
Dana Sedin New Belgium Brewing Company | Dana Sedin is the Manager of the Analytical and Sensory Laboratories at New Belgium Brewing Company. His work covers quality assurance testing, research and development, and support of new product development. He began his career in the brewing industry at Coors Brewing Company where he held both scientific and laboratory management positions for 10 years. He is an active member of the American Society of Brewing Chemists, and from 2008-2012 held the Technical Committee Chair Position on the American Society of Brewing Chemists Board of Directors and is currently the ASBC past president. Dana has a B.S. in chemistry from California State University, Sacramento and a Ph.D. in Analytical Chemistry from the University of Colorado, Boulder. In 2011, Dana completed his Post Graduate Certificate in Brewing from the University of Nottingham. |
